Before cook leg of lamb, we have to marinated it in herbs and spices and keep it refrigerated overnight, or better 24 hours. Use generously your favored herbs. Spice as much heat you prefered. Add red wine in marinade. Cook one hour open on high heat, than cover with lead. Cooke another hour or more. check readiness with fork. Let it rest for 10 minutes, before slicing.
